If I had an apple for breakfast (and I heard the apples have more caffeine) than coffee, would give me more energy and then a crash during the day? In addition, caffeine makes it harder to concentrate on concentrate and sit still?

Apples have no caffeine, lol. But this made me LOL. ;P
Caffeine does make it harder to concentrate, b/c it gives you “nervous” energy that makes you quite jumpy…but if you’re about to fall asleep, drink it, because it won’t harm concentration any more than sleep will. ;P Too much might cause lack of focus, but a cup or two won’t hurt you!
No, apples won’t make you crash. Candy-yes, apples-no! Eat it–keep that pesky doctor at bay.

it helps your brain wake up but it doesnt have any caffeine

I don’t know where you heard that apples have caffeine, but if you check any place where nutrition facts are displayed, you will not ever see apples containing caffeine.
apples are great for breakfast though.
I’ll recommend a book,
Skinny Bi+ch
talks about the effects of caffeine and eating fruit for breakfast

Apples are caffeine-free!!!
